    Mix ground coriander , ground cumin , turmeric , paprika , kosher salt , and cayenne pepper in a small bowl.

    Season boneless skinless chicken thighs (cut into medium-large chunks) with half of the spice blend.

    Brown the chicken in vegetable oil over high heat.

    Transfer the chicken to a bowl.

    Turn heat to medium.

    Add yellow onion (chopped) and cook until translucent.
